Valentine’s Chocolate Pudding Cream Cheese Frosting

I am excited about this recipe! I actually came up with the idea when we were celebrating my nephew’s birthday and everyone wanted chocolate cream cheese frosting for the cupcakes. I wanted the ingredients to be simple because we were there for a short visit and I didn’t want to spend a lot of time in the kitchen.

After a successful run, and everyone raving about the frosting, I knew I had scored something amazing and had to recreate it at home!

With Valentine’s Day around the corner, I thought it would be fun to whip up some Valentine’s Day cupcakes and frosting with the kids. I love having my kids in the kitchen with me because it teaches them at a young age how to navigate the kitchen and learn a great skill.

With just 4 simple ingredients, all you need to do is put the ingredients in a bowl and mix!

I like to use whipped cream cheese, but you can totally use a regular block of cream cheese at room temperature.

Instructions

Place all the ingredients in a bowl and mix at medium to high speed.

If it's too thick, add more powder sugar until it's the consistency you prefer.

We made up a batch of pink cupcakes for Valentine’s Day and lined them with some cute heart cupcake liners and the kids loved decorating them with cute little heart sprinkles!

What I love about this recipe is that it isn’t too sweet, like most frostings, which makes it a winner in our house! The BEST part is that you can change the flavor anytime you make it by choosing a different flavor instant pudding mix! If that’s not a good reason to stock up on instant pudding mix, I don’t know what is!

ENJOY!

Very delicious. I made a mistake and used a block of low fat cream cheese. (Didn’t read the part about the whipped cream cheese!) It started to bind up my mixer and I realized my mistake. I added about a cup of nonfat half and half and it resolved the problem. I made this WeightWatchers friendly by using the low fat cream cheese (whipped is also lower fat), sugar and fat free pudding. No one could tell the difference.

Are you just supposed to use the powder from the pudding box or actually make the pudding itself to add as its own ingredient?
