First, you’ll combine all the ingredients except the ham for the glaze and cook in a saucepan. Then you’ll add the sauce to the blender and blend until ready to strain through a mesh strainer:

Cut the ham in a diamond pattern, place it in a racked pan, and brush it with glaze. Bake, and then remove a little before it’s finished and reglaze the ham:

Raspberry Chipotle Glazed Ham

Raspberry Chipotle Glazed Ham

Prep Time: 40 minutes
Cook Time: 2 hours 30 minutes
Total Time: 3 hours 10 minutes

This ham is perfect for Easter dinner or anytime of the year!

Ingredients

  • 5-6 lb Smoked Ham (rump or shank)
  • 2 ¼ Cups Raspberry Preserves
  • 2 Tablespoons Dijon Mustard
  • ¼ Cups Apple Cider Vinegar
  • ½ Cups Brown Sugar
  • 3 Chipotle peppers in Adobo Sauce
  • ½ teaspoon Cayenne

Instructions

  1. Combine the preserves, mustard, apple cider vinegar, brown sugar, Cayenne, and chipotle peppers in a saucepan over medium low heat. Cook, stirring occasionally for 15 minutes.
  2. Place the sauce in a blender and blend well; pass through a mesh strainer to remove seeds.
  3. Heat oven 325°F.
  4. Cut the ham in a diamond pattern ½” deep.
  5. Place flat side down on a racked pan. Brush with glaze, reserve enough for later.
  6. Cook for 1 ½-2 hours until internal temperature reaches 135°F (20 minutes per pound)
  7. 20 minutes prior to the end of cooking, reglaze the ham.
  8. Remove from the oven and tent with foil for 20 minutes.
  9. Slice, serve, and enjoy!
