Strawberry Easter Cake Pops
Prep Time: 1 hour
Cook Time: 30 minutes
Total Time: 1 hour30 minutes
Sweet cake pops that can be enjoyed at Easter or anytime
Ingredients
1 box cake mix (any flavor)
½ - 1 cup icing (any flavor)
3 bags melting chocolate
1 package skinny lollipop sticks
Easter Sprinkles
Instructions
Prepare cake according to package instructions, allow to cool completely.
Crumble cake into a large bowl, add the icing starting with ½ cup. Mix until a dense, but slightly crumbly, dough ball can be molded in your hands. Add in additional icing if needed but take care not to add too much icing or the balls will become too moist and soft. Refrigerate the mixture for 30 minutes until chilled.
Measure out the cake mixture and form it into a 1” ball, be sure it is tight and uniform. Place on a parchment-lined cookie sheet; repeat the process until all the cake mixture is used up. Place in the refrigerator for an additional hour.
Melt the chocolate according to the package instructions (the best method is the double boiler method).
Dip the tip of a lollipop stick into the melted chocolate, insert it immediately into the cake ball, ensure that it goes in halfway to the center of the ball. Allow the chocolate to harden at room temperature, or place the sheet back in the refrigerator once all the pops have sticks for a few minutes.
Dip the cake pops carefully into the melted chocolate until they are completely covered. Gently tap the stick against the side of the bowl to remove excess melted chocolate.
Immediately apply the Easter decorations before the coating sets.
Place back onto a parchment-lined cookie sheet (or place upright into a foam block) and allow to harden and set.
Store in the refrigerator until ready to serve. They can be stored for up to one week.
